We're really lucky to have Sarah on the Re:Store team - owner of the Rowan Tree Bakery who supply Congar's Cafe with delicious homemade bakes throughout the year.  This year we're delighted to be sharing the Rowan Tree Bakery Christmas cake recipe for you to bake at home. 


The price includes a deposit of £2 for a glass jar, which you can keep to re:fill or return to us for your money back.


Pick from either regular mix or gluten-free.


The cake mix comes with four packs and full instructions.  The following ingredients are not included:


For the cake:

30ml Brandy (to make it alcohol free, you can use orange juice instead)

225g Butter

4 Medium Free-range eggs

1 tablespoon Black treacle

1/2 teaspoon vanilla extract

1 Lemon (rind and juice needed)


To decorate (if you choose the glazed fruit pictured):

A selection of nuts and dried fruit, e.g. blanched almonds, walnuts and cranberries (not provided)

5 tablespoons apricot jam

1 tablespoon brandy

Christmas Cake Mix - 8"/20cm cake

  • Sulphur dioxide, wheat/gluten, nuts including peanuts, almonds and walnuts

  • Pre-packed ingredients (allergens in bold):

    Pack A: sultanas (sunflower oil), currants, raisins (sunflower oil), chopped mixed peel (orange peel, glucose-fructose syrup, lemon peel, sugar, preservatives (potassium sorbate/sulphur dioxide, citric acid), glace cherries (sulphur dioxide)

    Pack B: plain flour (wheat gluten)/Gluten-free flour (depending on choice selected), ground almonds, mixed spice (coriander, cinnamon, fennel, ginger, caraway, cloves, nutmeg, pimento)

    Pack C: light soft brown sugar

    Pack D: chopped mixed nuts (almonds, peanuts, walnuts)
